We are Illinois' First Farmstead Creamery, founded in 2005. We make artisan goat cheeses from our herd of Nubian, La Mancha and Nigerian Dwarf goats. Our herd is certified "Animal Welfare Approved." We have a small fruit orchard, a farm-to-table "restaurant," and we host tours and educational programs for the general public and for beginning farmers.
Our vision is to create a diversified & sustainable farm that is accessible to our community. We promote local and seasonal foods and care for our environment.
Leslie and Wes moved to Champaign-Urbana from Madison, Wisconsin in 2003. Both academics and soil scientists, they bought their small farm to showcase diverse and sustainable agriculture practices. They are both retired from University jobs and work full time on their farm. They still love educating people about the beauty and bounty of Central Illinois' prairie soils.
We plan to make improvements to our barns to increase efficiency of feeding and overall animal comfort and welfare. We want to upgrade our farm kitchen to produce more local foods and teach classes. We want to lower our farm's carbon footprint with alternative energy and wastewater treatment technologies.
